Falafel with Mexican tortillas

This recipe actually includes two different recipes inside.

You can cook tortilla any time and add meat or chicken, serve differently.

Also you can eat your falafel balls by adding them in a green salad.


Ingredients

For tortilla:

- 3 WG flour

- 2 TS salt

- 1 WG warm water

- 1/3 TG olive oil

- 1 package of baking powder


For falafel:

- 2 WG chickpea

- 1 WG bread crumbs

- 2-3 pcs of garlic

- 1 mid-size onion

- 2 spring onions

- parsley (as much as you like)

- 1 TS cumin

- 1 TS salt

- 1 TS black pepper

- 1+1/2 sunflower oil

- 1 egg

- 1 TS baking soda


Preparation

Important*** when you cook tortilla, I suggest you to wait until your dough changes clour but not too much, in order not to make them too dry.

So, I start with preparing the tortillas because the dough will need time to rest.

In a bowl, add your flour, baking powder and salt, mix them.

Then, add olive oil and water in it.

When you have medium-hard dough, let it 20 minutes rest.

After 20 minutes, create small balls from your dough (I did 4 big tortillas, I haad 4 balls).

Open your balls with a help of little bit flour and rolling pin.

They are ready to be cooked.


Congratulations, first part is done!


Like in my humus recipe, you need to remove the skin of chickpeas one by one.

You can add your chickpeas, onion, garlic and parsley in your food processor (rondo).

After mixing them, crack your egg on it and add your flour, baking soda and spices.

After remolding your dough, let it rest for an hour in the fridge.

After an hour it is ready to be created small balls and fried in the sunflower oil.

What is good nearby?

I strongly suggest you to make green salad (cucumber and lettuce, if you like tomatoes and red pepper as well).

Also you can make a yogurt sauce with a mic of little bit yogurt, salt and oregano.
